ABSTRACT
Malnutrition is one of the major health concerns that include both under nutrition and overweight, especially in developing countries. As the population of world is growing continuously, nutritional scarcity along with food security must be overcome to provide adequate nutrition with minimum effects on environment. Microgreens are nutrient dense food which contains more digestible vitamins, minerals and other phyto-nutrients than the vegetables mature plant would produce. Microgreens are full of the nutrition along with vivid colour, intense flavour, crisp texture and useful enzymes which provide the many health benefits. In comparative study of fresh microgreen and radish vegetable has also concluded that the concentration of five minerals i.e. F, Mg, K, Ca, and total phosphorous, vitamin B9, vitamin C and Omega 3 fatty acid concentration are 1-3 times higher than the fresh radish. The study provides the nutritional essence of radish microgreen and its potential use over the mature radish. By using the less resources and time one can grow microgreen to secure the nutritional need.
